A comforting and quick meal featuring tender chicken in a rich buttery sauce, served with linguine.

- 2 large chicken breasts (boneless, skinless)
- 8 oz linguine pasta
- ½ cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
- 1 cup chicken broth
- 1 tablespoon lemon juice
- Freshly grated Parmesan cheese, for garnish
Instructions
- Season the chicken breasts with salt, pepper, smoked paprika, and onion powder. In a large skillet over medium heat, melt 2 tablespoons of butter and cook the chicken until golden and fully cooked, about 6-7 minutes per side. Remove and let it rest.
- In the same skillet, add the linguine pasta to boiling salted water. Cook according to package instructions until al dente, usually around 8-10 minutes. Reserve a cup of pasta water and then drain.
- In the skillet, melt the remaining butter and add minced garlic, fresh herbs, and red pepper flakes (if using). Sauté for about 1 minute until fragrant, then pour in the chicken broth and lemon juice, letting it simmer for 2-3 minutes.
- Slice the cooked chicken and add it back into the skillet along with the drained pasta and a splash of reserved pasta water. Toss everything together until well combined. Adjust seasoning with salt and pepper to taste.
- Serve your Cowboy Butter Chicken Linguine hot, garnished with freshly grated Parmesan and a sprinkle of parsley.

Let your chicken rest before slicing to keep it juicy. Don’t rush the sautéing of the garlic.
