Description

A comforting and quick meal featuring tender chicken in a rich buttery sauce, served with linguine.


Ingredients

  • 2 large chicken breasts (boneless, skinless)
  • 8 oz linguine pasta
  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • Freshly grated Parmesan cheese, for garnish

Instructions

  1. Season the chicken breasts with salt, pepper, smoked paprika, and onion powder. In a large skillet over medium heat, melt 2 tablespoons of butter and cook the chicken until golden and fully cooked, about 6-7 minutes per side. Remove and let it rest.
  2. In the same skillet, add the linguine pasta to boiling salted water. Cook according to package instructions until al dente, usually around 8-10 minutes. Reserve a cup of pasta water and then drain.
  3. In the skillet, melt the remaining butter and add minced garlic, fresh herbs, and red pepper flakes (if using). Sauté for about 1 minute until fragrant, then pour in the chicken broth and lemon juice, letting it simmer for 2-3 minutes.
  4. Slice the cooked chicken and add it back into the skillet along with the drained pasta and a splash of reserved pasta water. Toss everything together until well combined. Adjust seasoning with salt and pepper to taste.
  5. Serve your Cowboy Butter Chicken Linguine hot, garnished with freshly grated Parmesan and a sprinkle of parsley.

Notes

Let your chicken rest before slicing to keep it juicy. Don’t rush the sautéing of the garlic.
