Description

A comforting one-skillet meal featuring chicken, rice, and creamy Cajun flavors that brings the family together.


Ingredients

  • 1 pound chicken breast, cut into strips
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season the chicken with Cajun seasoning and cook in the skillet until browned and cooked through, about 5-7 minutes.
  2. Remove the chicken and set aside.
  3. In the same skillet, add the rice and toast for 1-2 minutes, stirring constantly.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until rice is cooked.
  5. Stir in the heavy cream and Parmesan cheese, then add the cooked chicken back into the skillet. Mix until combined and heated through.
  6. Season with salt and pepper to taste. Serve warm, garnished with chopped parsley.

Notes

Use half-and-half as a lighter substitute for heavy cream. Feel free to add vegetables or swap chicken for tofu for variations.
