Description

Ingredients

  • 2 cups cooked chicken (fresh, leftover, or rotisserie)
  • 1 cup cheddar cheese, shredded
  • 8 oz cream cheese, softened
  • 4 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortilla chips for serving
  • Optional toppings: avocado, cilantro, sour cream

Instructions

  1. In a large pot, sauté the onion and garlic until soft.
  2. Add the cooked chicken, broth, diced tomatoes, black beans, corn, cumin, and chili powder. Bring to a boil while stirring occasionally.
  3. Reduce the heat and let it simmer for about 15 minutes.
  4. Stir in the cream cheese and cheddar cheese until melted and creamy.
  5. Season with salt and pepper to taste.
  6. Serve hot with tortilla chips and your desired toppings.
