- 2 cups cooked chicken (fresh, leftover, or rotisserie)
- 1 cup cheddar cheese, shredded
- 8 oz cream cheese, softened
- 4 cups chicken broth
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Tortilla chips for serving
- Optional toppings: avocado, cilantro, sour cream
Instructions
- In a large pot, sauté the onion and garlic until soft.
- Add the cooked chicken, broth, diced tomatoes, black beans, corn, cumin, and chili powder. Bring to a boil while stirring occasionally.
- Reduce the heat and let it simmer for about 15 minutes.
- Stir in the cream cheese and cheddar cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot with tortilla chips and your desired toppings.
