- 1 pound lean chicken breast, diced
- 1 cup Greek yogurt
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the whole wheat pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken breast and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Lower the heat and stir in the Greek yogurt and Parmesan cheese until combined.
- Add the cooked pasta to the skillet and toss to coat everything evenly.
- Serve immediately, garnished with fresh parsley if desired.
Notes
This dish can be stored in an airtight container in the refrigerator for 2-3 days. Reheat in a skillet or microwave until heated through.
