Description

A comforting one-pan meal featuring tender chicken, silky garlic Parmesan sauce, and whole wheat pasta.


Ingredients

  • 8 oz whole wheat pasta
  • 1 lb lean chicken breast, diced
  • 1 cup Greek yogurt
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 cups spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the whole wheat pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken breast, season with salt and pepper, and cook until browned and cooked through.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Lower the heat, then stir in Greek yogurt and grated Parmesan cheese, mixing until well combined.
  5. Add spinach and cooked pasta to the skillet, tossing everything together until the spinach wilts.
  6. Adjust seasoning if needed, and serve hot.

Notes

Feel free to add fresh herbs for extra flavor and use pre-washed baby spinach to save time.
