- 8 oz whole wheat pasta
- 1 lb lean chicken breast, diced
- 1 cup Greek yogurt
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 cups spinach
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the whole wheat pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken breast, season with salt and pepper, and cook until browned and cooked through.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Lower the heat, then stir in Greek yogurt and grated Parmesan cheese, mixing until well combined.
- Add spinach and cooked pasta to the skillet, tossing everything together until the spinach wilts.
- Adjust seasoning if needed, and serve hot.
Notes
Feel free to add fresh herbs for extra flavor and use pre-washed baby spinach to save time.
