Ingredients

1 tbsp olive oil

1 small onion, diced

2 carrots, sliced

3 garlic cloves, minced

4 cups chicken broth (low sodium)

1 cup heavy cream

1 cup freshly grated parmesan

1 tsp Italian seasoning

Salt and pepper, to taste

2 cups baby spinach (optional)


Instructions

1. In a large pot, heat olive oil and brown sausage over medium heat.

2. Add onions, carrots, and garlic. Sauté until soft, about 5 minutes.

3. Pour in chicken broth and bring to a boil. Reduce heat and simmer 10 minutes.
