- 2 lbs chicken thighs or breasts, boneless
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream (or half-and-half)
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups cooked white rice (or brown rice, jasmine, or quinoa)
- Optional: 1 teaspoon chicken bouillon for extra flavor
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and paprika.
- Sear chicken 3–4 minutes per side until golden brown. Remove from pan and set aside.
- In the same pan, sauté onions until soft, then add garlic and cook 1 more minute.
- Pour in chicken broth and bring to a simmer, scraping the bottom of the pan.
- Stir in heavy cream and thyme. Simmer gently for 2–3 minutes.
- Return chicken to the pan. Cover and cook on low for 20 minutes, until chicken is tender and cooked through.
- Serve over warm cooked rice and garnish with parsley.
Notes
To prevent curdling, simmer cream on low and avoid boiling. Store leftovers in the fridge up to 3 days or freeze separately from rice for best texture.
