Description

A rich and comforting skillet dinner featuring tender chicken smothered in a creamy garlic-onion sauce, served over fluffy rice perfect for cozy nights or big family meals.


Ingredients

Scale
  • 2 lbs chicken thighs or breasts, boneless
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups cooked white rice (or brown rice, jasmine, or quinoa)
  • Optional: 1 teaspoon chicken bouillon for extra flavor
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and paprika.
  2. Sear chicken 3–4 minutes per side until golden brown. Remove from pan and set aside.
  3. In the same pan, sauté onions until soft, then add garlic and cook 1 more minute.
  4. Pour in chicken broth and bring to a simmer, scraping the bottom of the pan.
  5. Stir in heavy cream and thyme. Simmer gently for 2–3 minutes.
  6. Return chicken to the pan. Cover and cook on low for 20 minutes, until chicken is tender and cooked through.
  7. Serve over warm cooked rice and garnish with parsley.

Notes

To prevent curdling, simmer cream on low and avoid boiling. Store leftovers in the fridge up to 3 days or freeze separately from rice for best texture.
