- 2 cups Fresh Palak (Spinach) Puree
- 2 cups Milk
- 2 tablespoons Wheat Flour
- 1 cup Shredded Mozzarella Cheese
- Salt and Pepper to taste
- 2 tablespoons Olive Oil or Butter
- 2 cloves Garlic (Optional)
- 8 ounces Pasta of Choice
Instructions
- Cook the pasta according to package instructions until al dente.
- Heat olive oil or butter over medium heat. Add minced garlic (if using) and sauté until fragrant.
- Stir in the wheat flour to make a roux, cooking for a minute.
- Add milk gradually, stirring continuously to avoid lumps.
- Once the mixture thickens, add the palak puree and mozzarella cheese, stirring until the cheese melts.
- Season with salt and pepper to taste.
- Toss the cooked pasta in the creamy spinach sauce and serve warm.
Notes
You can prep the spinach puree ahead of time and keep it in the fridge for faster cooking. Add cooked chicken or sausage for extra protein.
