Description

Crispy Smashed Carrots are a simple and delicious side dish that brings out the sweet flavor of carrots with a crunchy texture.


Ingredients

  • 1 lb Carrots
  • 2 tbsp Butter
  • 3 cloves Garlic, minced
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and boil the carrots in salted water until tender, about 15-20 minutes.
  3. Drain the carrots and allow them to cool slightly.
  4. Place the carrots on a baking sheet and smash them gently with a fork or potato masher.
  5. Drizzle with olive oil, melted butter, and minced garlic.
  6. Season with salt and pepper to taste.
  7. Roast in the oven for 20-25 minutes until crispy and caramelized.
  8. Garnish with fresh herbs, if desired, and serve warm.
