Instructions
- Preheat the oven to 425°F (220°C).
- Peel and boil the carrots in salted water until tender, about 15-20 minutes.
- Drain the carrots and allow them to cool slightly.
- Place the carrots on a baking sheet and smash them gently with a fork or potato masher.
- Drizzle with olive oil, melted butter, and minced garlic.
- Season with salt and pepper to taste.
- Roast in the oven for 20-25 minutes until crispy and caramelized.
- Garnish with fresh herbs, if desired, and serve warm.
