A comforting, one-pot meal of chicken, rice, and creamy sauce, cooked slowly in a crock pot for easy preparation and delicious flavor.

- 4 boneless, skinless chicken breasts
- 1 cup uncooked rice
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 cup shredded cheese
- 1 onion, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the bottom of the crock pot.
- In a bowl, mix the uncooked rice, cream of chicken soup, chicken broth, onion, garlic powder, salt, and pepper.
- Pour the mixture over the chicken in the crock pot.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through.
- About 30 minutes before serving, add the shredded cheese and let it melt.
- Serve warm.
Notes
For a lighter version, use reduced-fat soup and cheese, and add an extra cup of chopped vegetables. Store leftovers in airtight containers in the refrigerator for up to four days.
