Description

A flavorful, one-pot slow cooker jambalaya featuring chicken, sausage, and aromatic vegetables, perfect for busy weeknights.


Ingredients

  • 1 pound chicken thighs, diced
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup long grain rice
  • 2 teaspoons Creole seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a Crock Pot, combine the chicken, sausage, onion, bell pepper, celery, and garlic.
  2. Add the diced tomatoes (with juice), chicken broth, rice, Creole seasoning, salt, black pepper, and cayenne pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  5. Before serving, stir and garnish with sliced green onions. Let it rest for 5 to 10 minutes if the pot seems very watery.
