- 4 chicken breasts
- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Place the diced sweet potatoes and chopped onion at the bottom of the crockpot.
- Season the chicken breasts with salt, pepper, thyme, and paprika, then place them on top of the vegetables.
- Add minced garlic and pour the chicken broth over everything.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through and tender.
- Shred the chicken and mix everything together before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For easy cleanup, use a slow cooker liner.
