Description

A comforting, one-pot meal of tender chicken and sweet potatoes cooked in a crockpot, perfect for busy families.


Ingredients

Scale
  • 4 chicken breasts
  • 2 large sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Place the diced sweet potatoes and chopped onion at the bottom of the crockpot.
  2. Season the chicken breasts with salt, pepper, thyme, and paprika, then place them on top of the vegetables.
  3. Add minced garlic and pour the chicken broth over everything.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through and tender.
  5. Shred the chicken and mix everything together before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For easy cleanup, use a slow cooker liner.
