Description

Crockpot Salsa Chicken is an easy, healthy dinner recipe with only a few ingredients. Learn how to make this tasty meal for family and meal prep.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 2 cups salsa (choose mild, medium, or hot)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Place chicken in the bottom of the slow cooker.
  2. Pour salsa over the chicken.
  3. Sprinkle with cumin, chili powder, garlic powder, salt, and pepper.
  4. Cover and cook on low for 4–6 hours or until the chicken is tender and fully cooked.
  5. Shred chicken using two forks and stir back into the sauce.
  6. Serve hot in tacos, over rice, in bowls, or as a healthy wrap filling.

Notes

Avoid overcooking the chicken for best texture. Add lime juice or jalapeños for extra zest. This stores and freezes well, making it great for meal prep.
