- 2 lbs boneless skinless chicken breasts
- 2 cups thick salsa (your choice of heat level)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: 8 oz cream cheese for creamy salsa chicken
- Optional: 1 cup canned black beans or corn
Instructions
- Place chicken breasts in the bottom of the crockpot.
- Pour salsa over the chicken.
- Sprinkle with cumin, chili powder, garlic powder, salt, and pepper.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Shred chicken with two forks and stir back into the sauce.
- If making creamy salsa chicken, stir in cream cheese during the last 30 minutes.
- Serve in tacos, burrito bowls, over rice, or with baked potatoes.
Notes
Use thick salsa to prevent a watery dish. Avoid overcooking to keep the chicken juicy. This recipe stores well and can be frozen for future meals.
