Description

Crockpot Salsa Chicken is a simple and flavorful slow cooker dinner made with chicken and salsa. Perfect for meal prep, weeknights, and family gatherings.


Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 2 cups thick salsa (your choice of heat level)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: 8 oz cream cheese for creamy salsa chicken
  • Optional: 1 cup canned black beans or corn

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Pour salsa over the chicken.
  3. Sprinkle with cumin, chili powder, garlic powder, salt, and pepper.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  5. Shred chicken with two forks and stir back into the sauce.
  6. If making creamy salsa chicken, stir in cream cheese during the last 30 minutes.
  7. Serve in tacos, burrito bowls, over rice, or with baked potatoes.

Notes

Use thick salsa to prevent a watery dish. Avoid overcooking to keep the chicken juicy. This recipe stores well and can be frozen for future meals.
