Description
Crockpot Salsa Chicken made with boneless skinless chicken, spicy salsa, and simple seasoning and spice for easy weeknight dinners everyone will love.
Ingredients

- 2 lbs boneless skinless chicken breasts
- 2 cups salsa (mild, medium, or hot)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: 1 cup canned black beans or corn
Instructions
- Place chicken breasts in the bottom of the crockpot.
- Pour salsa evenly over the chicken.
- Sprinkle with cumin, chili powder, garlic powder, salt, and pepper.
- Cover and cook on low for 6–8 hours or high for 3–4 hours.
- Shred the chicken with two forks and stir into the salsa mixture.
- Add black beans or corn if desired, and mix well.
- Serve over rice, in tacos, burritos, or with a green salad.
Notes
Avoid overcooking to maintain moisture. Use spicy salsa for more heat or add jalapeños. Store leftovers for easy meal prep during the week.
