Description

Crockpot Salsa Chicken made with boneless skinless chicken, spicy salsa, and simple seasoning and spice for easy weeknight dinners everyone will love.


Ingredients

Scale
  • 2 lbs boneless skinless chicken breasts
  • 2 cups salsa (mild, medium, or hot)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: 1 cup canned black beans or corn

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Pour salsa evenly over the chicken.
  3. Sprinkle with cumin, chili powder, garlic powder, salt, and pepper.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  5. Shred the chicken with two forks and stir into the salsa mixture.
  6. Add black beans or corn if desired, and mix well.
  7. Serve over rice, in tacos, burritos, or with a green salad.

Notes

Avoid overcooking to maintain moisture. Use spicy salsa for more heat or add jalapeños. Store leftovers for easy meal prep during the week.
