- 4 boneless skinless chicken breasts
- 2 cups of salsa (jarred or fresh)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: 4 oz cream cheese
- Optional: 1 cup canned black beans (drained and rinsed)
- Optional: 1 cup frozen corn
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Pour salsa evenly over the chicken.
- Sprinkle with cumin, chili powder, garlic powder, salt, and pepper.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours.
- Once cooked, shred the chicken with two forks directly in the crockpot.
- If using cream cheese, stir it in now until melted and creamy.
- Add black beans and corn if desired, and mix well.
- Serve warm in tacos, over rice, or in bowls with your favorite toppings.
Notes
Use thick salsa to avoid watery results. Avoid lifting the lid while cooking. For a creamy version, stir in cream cheese at the end. Chicken should reach an internal temperature of 165°F.
