Description

Crockpot Salsa Chicken is a comforting, flavorful slow cooker recipe made with just a few ingredients and perfect for tacos, bowls, or wraps. It’s an easy weeknight dinner your family will love.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 cups of salsa (jarred or fresh)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: 4 oz cream cheese
  • Optional: 1 cup canned black beans (drained and rinsed)
  • Optional: 1 cup frozen corn

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Pour salsa evenly over the chicken.
  3. Sprinkle with cumin, chili powder, garlic powder, salt, and pepper.
  4. Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  5. Once cooked, shred the chicken with two forks directly in the crockpot.
  6. If using cream cheese, stir it in now until melted and creamy.
  7. Add black beans and corn if desired, and mix well.
  8. Serve warm in tacos, over rice, or in bowls with your favorite toppings.

Notes

Use thick salsa to avoid watery results. Avoid lifting the lid while cooking. For a creamy version, stir in cream cheese at the end. Chicken should reach an internal temperature of 165°F.
