Instructions
- In a crockpot, combine the shredded chicken, cream cheese, corn, black beans, diced tomatoes, and savory seasonings.
- Add the chicken broth and season with salt and pepper to taste.
- Stir everything together until well mixed.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender and flavors meld.
- Once cooked, stir well and serve hot, shredding any large chicken pieces if needed.
- Garnish with cilantro and serve with toppings like tortilla chips, sour cream, and lime wedges.
Notes
For a thicker chili, mash a small scoop of beans before serving. Use rotisserie chicken to save time.
