- 70 g Brown Sugar
- 70 g Sugar
- 115 g Butter (melted)
- 1 Egg
- 1 tsp Vanilla Extract
- 220 g Plain Flour
- 1 tbsp Cornflour
- ½ tsp Baking Soda
- ½ tsp Baking Powder
- ½ tsp Salt
- 90 g Butter (softened)
- 90 g Cream Cheese
- 250 g Icing Sugar
Instructions
- Preheat oven to 175°C (350°F). Line a baking tray with parchment.
- In a bowl mix melted butter with brown sugar and sugar until smooth.
- Add egg and vanilla, then stir until mixed.
- In another bowl sift flour, cornflour, baking soda, baking powder, and salt.
- Add dry mix to wet mix and stir until a soft dough forms.
- Chill the dough for 20–30 minutes to firm it up.
- Scoop large mounds of dough onto the tray, leaving space for spread.
- Bake for 10–12 minutes or until edges set and centers are soft.
- Let cookies cool on the tray for 5 minutes, then transfer to a rack to cool fully.
- For frosting, beat softened butter with cream cheese until smooth.
- Add icing sugar slowly and beat until thick and creamy.
- Pipe or spread frosting on cooled cookies and serve.
Notes
Serve cookies at room temperature to enjoy the soft frosting. You can add a sprinkle of sea salt or small fruit pieces for color.
