Description

A delightful cake that combines strawberry cake mix and guava nectar, creating a moist and flavorful dessert reminiscent of tropical paradise.


Ingredients

  • 1 cup Guava Nectar or Guava Juice (for batter)
  • 3 large Eggs (room temperature)
  • 1/2 cup Coconut Oil (melted)
  • 8 oz Cream Cheese (room temperature)
  • 1/2 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 8 oz Cool Whip (thawed)
  • 2 1/2 cups Guava Nectar or Guava Juice (for glaze)
  • 1/2 cup Granulated Sugar
  • 2 tbsp Cornstarch
  • 1/4 cup Water (for slurry)
  • 1 cup Sweetened Coconut Flakes (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the strawberry cake mix, guava nectar, eggs, and melted coconut oil in a large mixing bowl until smooth.
  3. Pour the batter into a greased 9×13-inch baking dish, spreading it evenly.
  4. Bake for 25-30 minutes or until a toothpick comes out clean.
  5. Beat the cream cheese with the granulated sugar and vanilla extract until creamy.
  6. Fold the Cool Whip into the cream cheese mixture gently.
  7. Combine the guava nectar, sugar, cornstarch, and water in a small saucepan, bringing it to a boil until thickened for the glaze.
  8. Pour the glaze over the cooled cake and let it soak in for a few minutes.
  9. Sprinkle sweetened coconut flakes on top to garnish.

Notes

Letting the cake sit after baking allows the flavors to meld beautifully.
