Cozy cinnamon muffins that are sweet, tender, and perfect for snacking.
Ingredients

- 1 and 3/4 cups all purpose flour
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon (plus extra for topping)
- 2 large eggs
- 1/2 cup plain yogurt or sour cream
- 1/3 cup neutral oil
- 2 tablespoons melted butter
- 1/2 cup milk (dairy or unsweetened non-dairy)
- 1 teaspoon vanilla
Instructions
- Heat oven to 375°F. Line a muffin pan with paper liners or lightly grease it.
- In a big bowl, whisk flour, sugars, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk eggs, yogurt, oil, melted butter, milk, and vanilla.
- Pour wet into dry and stir gently until you do not see dry flour. Do not overmix. A few lumps are totally fine.
- Spoon into the pan, about 3/4 full. Sprinkle a little cinnamon and sugar on top if you want that bakery look.
- Bake 16 to 20 minutes, until the tops spring back and a toothpick comes out with just a few crumbs.
Notes
These muffins can be baked as a quick bread in a greased 9 by 5 pan at 350°F for 45 to 55 minutes.
