- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 to 2 carrots, shredded or finely chopped (optional)
- 1/4 cup flour
- 3 cups chicken broth (or vegetable broth)
- 2 cups whole milk
- 1 cup half and half (optional)
- 4 to 5 cups broccoli florets (fresh or frozen)
- 2 to 3 cups sharp cheddar cheese, freshly shredded
- Salt, pepper, and a pinch of paprika (optional)
Instructions
- Melt the butter with a drizzle of oil over medium heat in a big pot. Add onion and cook for 3 to 4 minutes until softened.
- Add garlic and carrots. Cook for about 1 minute, until fragrant.
- Sprinkle in the flour and stir constantly for about 1 minute until pasty.
- Slowly pour in the broth, stirring to keep smooth. Then add milk and half and half, bringing to a gentle simmer.
- Add the broccoli and simmer for 10 to 15 minutes until tender.
- Lower the heat and stir in cheddar gradually until melted. Season with salt and pepper to taste.
Notes
Shred your own cheese for better melting. If you want it thicker, simmer longer or blend a portion of the soup.
