Description

A sweet and cozy zucchini bread that is easy to make and perfect for sharing.


Ingredients

  • 2 cups grated zucchini, lightly drained
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large bowl, combine the grated zucchini, granulated sugar, and brown sugar.
  3. Add the eggs and oil, and mix well until combined.
  4. Sift together the flour, cinnamon, nutmeg, baking soda, baking powder, and salt, and add to the wet ingredients.
  5. Mix until just combined, being careful not to overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick comes out with a few moist crumbs.
  8. Cool in the pan for 20-30 minutes before transferring to a wire rack to cool completely.

Notes

For best results, do not overmix the batter and let the bread cool completely before slicing.
