Description

A family-favorite dump-and-go crockpot meal with tender chicken soaked in sweet and savory teriyaki sauce perfect for busy weeknights or meal prep days.


Ingredients

Scale
  • 2 lbs boneless chicken breasts or thighs
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar or honey
  • 2 teaspoons fresh garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 tablespoon sesame oil
  • Optional: sliced bell peppers, broccoli, or snap peas
  • 1 tablespoon cornstarch + 2 tablespoons water (to thicken sauce)
  • Sesame seeds and green onions for garnish

Instructions

  1. Place chicken, soy sauce, brown sugar (or honey), garlic, ginger, and sesame oil into the crockpot.
  2. Cover and cook on low for 6 hours or high for 3 hours.
  3. During the last 30 minutes of cooking, add any vegetables if using.
  4. Once cooked, shred the chicken using two forks directly in the crockpot.
  5. If a thicker sauce is desired, mix cornstarch with water and stir into the crockpot. Cook on high for 10–15 minutes until thickened.
  6. Serve over rice, noodles, or quinoa and garnish with sesame seeds and chopped green onions.
