Description
This fun and festive Easter Bunny Poke Cake features a fluffy base soaked in strawberry gelatin, topped with whipped cream, crushed cookies, and adorable candy decorations.
Ingredients
1 box white cake mix (plus ingredients on box)
1 cup boiling water
1 box strawberry gelatin (3 oz)
1/2 cup cold water
1 tub whipped topping (8 oz)
1 cup crushed vanilla or chocolate sandwich cookies
Assorted Easter candies (bunny Peeps, candy eggs, sprinkles)
Green-dyed shredded coconut (optional)
Instructions
1. Bake the cake according to the package directions and let it cool.
2. Using the handle of a spoon, poke holes all over the cake.
3. Dissolve strawberry gelatin in boiling water, then stir in cold water.
4. Pour the gelatin evenly over the cake, letting it soak in.
5. Refrigerate for 4 hours or overnight.
6. Spread whipped topping evenly over the chilled cake.
7. Sprinkle crushed cookies over the top.
8. Decorate with candy, coconut, and sprinkles.
9. Refrigerate until ready to serve.
Notes
Try using lemon pudding instead of gelatin for a creamy twist.
