- 1 ½ cups dried red lentils
- 2 large garlic cloves, minced
- 1 large shallot (or 1 small onion, about 1/3 cup, diced)
- 1/3 cup grated carrots (about 3 small)
- 1 tablespoon tomato paste
- ¼ cup chopped fresh cilantro
- 1 teaspoon salt (or to taste)
- ½ teaspoon ground black pepper
- Neutral flavored cooking oil (for pan-frying, optional)
Instructions
- Preheat the oven to 400ºF and line a baking sheet with parchment paper or a silicone mat.
- Soak the lentils in water (about 2 inches above) for two hours, then rinse and drain well.
- In a food processor, combine drained lentils, garlic, shallot, carrots, tomato paste, cilantro, salt, and pepper. Pulse until the mixture holds together, scraping down the sides as needed.
- Shape about ¼ cup of the mixture into patties, about ½ inch thick.
- Option 1 – Bake: Bake for 10 minutes, flip, and bake another 10 minutes until crispy.
- Option 2 – Pan-Fry: Heat oil in a skillet and cook patties for about 4 minutes per side until golden and crisp. Drain on paper towels.
- Serve with a bun, salad, or roasted potatoes.
Notes
Soak the lentils for the best texture. Add breadcrumbs if the mixture feels too wet. Try adding cumin, chili powder, or your favorite herbs for extra flavor.
