This Easy Asian Cucumber Salad is light, crisp, and full of flavor. Fresh cucumbers are tossed in a tangy, savory dressing with sesame and chili oil, making it the perfect side dish for any Asian-inspired meal.

- 5 Persian cucumbers
- 1/2 tsp salt
- 1/2 tbsp sesame oil
- 3/4 tbsp light soy sauce
- 1/2–1 tbsp sugar (to taste)
- 3/4 tbsp rice vinegar
- 1 tbsp chili oil
- 1/2 tbsp sesame seeds
- 1/2 tbsp garlic (minced, optional)
Instructions
- Rinse the cucumbers and slice one end at an angle.
- Continue slicing at an angle until you have thin oval slices to your preferred thickness.
- Add the cucumber slices to a bowl and sprinkle with 1/2 tsp of salt. Mix well and refrigerate for 20 minutes to draw out water.
- After 20 minutes, drain the liquid and rinse the cucumbers quickly before returning them to the bowl.
- Add sesame oil, soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic to the bowl.
- Stir until the cucumbers are evenly coated. Serve chilled and enjoy!
Notes
Serve chilled as a side dish or snack. Store leftovers in an airtight container in the fridge for up to 2 days. Adjust sugar for sweetness and chili oil for spice. For added freshness, mix in herbs like cilantro or mint.
