Description

This Easy Asian Cucumber Salad is light, crisp, and full of flavor. Fresh cucumbers are tossed in a tangy, savory dressing with sesame and chili oil, making it the perfect side dish for any Asian-inspired meal.


Ingredients

  • 5 Persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/21 tbsp sugar (to taste)
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp garlic (minced, optional)

Instructions

  1. Rinse the cucumbers and slice one end at an angle.
  2. Continue slicing at an angle until you have thin oval slices to your preferred thickness.
  3. Add the cucumber slices to a bowl and sprinkle with 1/2 tsp of salt. Mix well and refrigerate for 20 minutes to draw out water.
  4. After 20 minutes, drain the liquid and rinse the cucumbers quickly before returning them to the bowl.
  5. Add sesame oil, soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic to the bowl.
  6. Stir until the cucumbers are evenly coated. Serve chilled and enjoy!

Notes

Serve chilled as a side dish or snack. Store leftovers in an airtight container in the fridge for up to 2 days. Adjust sugar for sweetness and chili oil for spice. For added freshness, mix in herbs like cilantro or mint.
