Ingredients

  • 1 lb chicken breast, diced
  • 2 tablespoons black pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 green onions, chopped
  • Salt to taste
  • Optional: garlic and ginger for flavor

Instructions

  1. In a bowl, mix the diced chicken with soy sauce, oyster sauce, cornstarch, and black pepper. Set aside to marinate for 15 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the marinated chicken and stir-fry until lightly browned and cooked through, about 5-7 minutes.
  4. Add the sliced bell pepper, onion, and green onions and stir-fry for another 3-4 minutes.
  5. Season with salt to taste and serve hot.

Use boneless skinless thighs for juicier results, or for a gluten-free version, opt for tamari and a gluten-free oyster sauce.
