Description

A quick and comforting dish perfect for busy weeknights, Easy Chicken Fried Rice comes together with leftover rice, vegetables, and chicken for a flavorful meal that brings the family together.


Ingredients

  • 2 cups cooked rice
  • 1 cup cooked, diced chicken
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the mixed vegetables and cook until tender.
  3. Push the vegetables to the side and pour in the beaten eggs. Scramble until fully cooked.
  4. Add the cooked chicken and rice to the skillet and mix well.
  5. Pour in the soy sauce and mix everything together.
  6. Cook for another 3-5 minutes, stirring frequently.
  7. Season with salt and pepper to taste.
  8. Garnish with the chopped green onions and serve warm.
