Description

A comforting and easy crockpot meal that combines chicken, broccoli, and rice with a creamy cheddar cheese sauce, perfect for busy weeknights.

Ingredients

Scale
  • 2 cups cooked rice
  • 1 pound chicken breast, cubed
  • 2 cups broccoli florets
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • Salt and pepper to taste
  • Garlic powder (optional)

Instructions

  1. In the crockpot, combine the cubed chicken, broccoli florets, cream of chicken soup, milk, salt, pepper, and garlic powder. Stir until well mixed.
  2. Cover and cook on low for 4-6 hours or until the chicken is cooked through.
  3. About 30 minutes before serving, add the cooked rice and shredded cheddar cheese. Stir until combined and cheese is melted.
  4. Serve warm and enjoy!

Notes

Consider adding fresh herbs like parsley or chives for an extra lift. Leftover roast chicken can be used in the final hour to warm through.
