- 4 large eggs
- 1 cup potatoes, diced
- 1 red bell pepper, chopped
- 2 cups fresh spinach
- 1/2 cup onion, diced
- 1/4 cup milk
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large oven-safe skillet, heat olive oil over medium heat.
- Add potatoes and cook until they are tender, about 10 minutes.
- Add onion and red bell pepper, and cook for another 5 minutes.
- Stir in fresh spinach until wilted.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture over the veggies in the skillet.
- Cook without stirring for 3-4 minutes until the edges start to set.
- Transfer the skillet to the oven and bake for 15-20 minutes or until the frittata is set in the center.
- Allow to cool slightly, then slice and serve.
Notes
Let the frittata rest for 5 minutes before slicing for cleaner cuts. Serve warm or at room temperature with yogurt or sour cream on the side.
