Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat until it is browned. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Cook for about 3-4 minutes until they are softened.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Let it simmer for 5-7 minutes until the mixture thickens a bit.
  5. Transfer the beef mixture to a casserole dish, spreading it evenly.
  6. Top it with prepared mashed potatoes, making sure to cover the filling completely.
  7. Dot the mashed potatoes with butter and sprinkle shredded cheddar cheese on top if you choose to use it.
  8. Bake in the preheated oven for 20-30 minutes, until the top is golden and bubbly.
  9. Let it cool for 5 minutes before serving.

Notes

For added flavor, consider using ground lamb instead of beef. Use store-bought mashed potatoes to cut down on preparation time.
