Description
A comforting and customizable dish filled with hearty grains, veggies, and savory sauce all baked in sweet bell peppers. Perfect for family dinners or solo meals.

- 4 large bell peppers (red, yellow, or green)
- 1 cup cooked rice (or quinoa)
- 1/2 pound ground beef or lentils
- 1 cup tomato sauce
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1/2 cup shredded cheese (optional)
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Slice tops off bell peppers and remove seeds and membranes. Set aside.
- In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft.
- Add ground beef (or lentils) and cook until browned. Stir in cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Mix well.
- Stuff each pepper with the filling and place upright in a baking dish.
- Pour a little extra tomato sauce over the tops if desired.
- Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle cheese on top, and bake uncovered for 10 more minutes or until cheese is bubbly and golden.
Notes
You can prepare the filling in advance and refrigerate. For a vegetarian version, use lentils or beans. To keep it light, opt for cauliflower rice and skip the cheese.
