Description

These fudgy brownies use Greek yogurt for moisture and zero-calorie sweetener to keep the sugar content low, making them a family favorite dessert.


Ingredients

  • 1/2 cup unsweetened cocoa powder, sifted

  • 1/2 to 2/3 cup erythritol or granulated monk fruit blend
  • 1/4 cup unsalted butter, melted, or neutral oil
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of fine sea salt
  • Optional: 1/3 cup sugar-free chocolate chips or chopped nuts
  • Optional: 1 tsp instant espresso powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Mix together the cocoa, flour, baking powder, and salt in a bowl.
  3. Whisk the eggs lightly, then combine with Greek yogurt, melted butter, erythritol, and vanilla in a larger bowl.
  4. Combine the dry ingredients into the wet mixture until just combined; avoid overmixing.
  5. Fold in any optional chocolate chips or nuts if using.
  6. Bake for 18 to 24 minutes, checking after 18 minutes until a toothpick comes out with moist crumbs.
  7. Cool on a wire rack for at least 20 minutes before slicing.

Notes

For a fudgier brownie, underbake slightly; for cakier, bake a few minutes longer. Store in an airtight container for up to 3 days.
