Description

Egg Roll in a Bowl is a quick, flavorful twist on the classic egg roll, packed with ground turkey, fresh veggies, and Asian-inspired seasonings for a healthy, comforting meal.


Ingredients

  • 2 tablespoons olive oil (divided)
  • 1 pound ground turkey
  • 1 small sweet onion (finely diced)
  • 1 cup shredded carrots
  • 3 garlic cloves (finely minced)
  • 1 teaspoon finely minced fresh ginger
  • ¼ cup chicken broth
  • 1 small head cabbage (about 8 cups shredded)
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon toasted sesame oil
  • Cooked white rice
  • Green onions (green parts only, thinly sliced)
  • Toasted sesame seeds
  • Sriracha Mayo (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add ground turkey and cook for 5–6 minutes until nearly cooked through.
  2. Push turkey to one side, add onion and remaining oil, and cook 3–4 minutes.
  3. Add carrots, garlic, and ginger. Stir and cook 2 minutes.
  4. Pour in chicken broth, scraping brown bits from the pan.
  5. Add cabbage, soy sauce or tamari, rice vinegar, salt, and pepper. Stir, cover, and cook on medium-low for 12–15 minutes until cabbage is tender.
  6. Remove from heat and stir in toasted sesame oil.
  7. Serve over white rice, topped with green onions, toasted sesame seeds, and optional sriracha mayo.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for later. Reheat in a skillet or microwave. Customize with extra veggies or tofu for a vegetarian version.
