Egg Roll in a Bowl is a quick, flavorful twist on the classic egg roll, packed with ground turkey, fresh veggies, and Asian-inspired seasonings for a healthy, comforting meal.

- 2 tablespoons olive oil (divided)
- 1 pound ground turkey
- 1 small sweet onion (finely diced)
- 1 cup shredded carrots
- 3 garlic cloves (finely minced)
- 1 teaspoon finely minced fresh ginger
- ¼ cup chicken broth
- 1 small head cabbage (about 8 cups shredded)
- 3 tablespoons soy sauce or tamari
- 1 tablespoon rice vinegar
- ¾ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon toasted sesame oil
- Cooked white rice
- Green onions (green parts only, thinly sliced)
- Toasted sesame seeds
- Sriracha Mayo (optional)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add ground turkey and cook for 5–6 minutes until nearly cooked through.
- Push turkey to one side, add onion and remaining oil, and cook 3–4 minutes.
- Add carrots, garlic, and ginger. Stir and cook 2 minutes.
- Pour in chicken broth, scraping brown bits from the pan.
- Add cabbage, soy sauce or tamari, rice vinegar, salt, and pepper. Stir, cover, and cook on medium-low for 12–15 minutes until cabbage is tender.
- Remove from heat and stir in toasted sesame oil.
- Serve over white rice, topped with green onions, toasted sesame seeds, and optional sriracha mayo.
Notes
Store leftovers in an airtight container for up to 3 days or freeze for later. Reheat in a skillet or microwave. Customize with extra veggies or tofu for a vegetarian version.
