Ingredients

- ¼ teaspoon cream of tartar or lemon juice

Instructions
- Separate the egg yolks and whites carefully. Ensure no yolk gets into the whites.
- In a bowl, whisk egg yolks with milk, vanilla extract, and 1 tablespoon sugar until smooth. Sift in flour and baking powder, then mix gently.
- In a clean bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add remaining sugar and continue beating to stiff, glossy peaks.
- Fold egg whites into the yolk mixture in thirds, gently folding with a spatula to maintain airiness.
- Preheat a nonstick skillet over low heat and lightly grease with butter or oil.
- Place ring molds in the pan if using. Scoop batter into molds or directly onto the pan, stacking high for rise.
- Cover with a lid and cook for 5–6 minutes until set. Flip gently and cook another 4–5 minutes until golden and cooked through.
- Serve warm with powdered sugar, syrup, whipped cream, or fresh fruit.
