Description

This protein-rich bowl combines creamy cottage cheese with lentils, beets, and crunchy pumpkin seeds for a wholesome meal that can be enjoyed hot or cold.


Ingredients

  • 1 cup cottage cheese
  • 1 cup cooked lentils
  • 1/2 cup grated beets
  • 2 boiled eggs, sliced (optional)
  • 1/4 cup pickled red cabbage or sauerkraut
  • 2 tablespoons pumpkin seeds
  • Fresh dill, for garnish
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook lentils with a pinch of garlic and bay leaf until tender, then let cool.
  2. Toss the lentils with cottage cheese and grated beets.
  3. If using, add the sliced boiled eggs or grilled chicken.
  4. Garnish with fresh dill and drizzle with olive oil and vinegar.
  5. Season with salt and black pepper to taste.
  6. Serve cold or slightly warmed, adding rye toast or pickled onions on the side if desired.

Notes

This bowl can be made ahead of time and stored separately for meal prep. Rotate vegetables with the seasons for variety.
