Instructions
- Cook the rice or quinoa according to package instructions.
- In a large skillet, heat olive oil over medium heat. Season the diced chicken with salt and pepper, and cook until browned and cooked through.
- In a large bowl, combine the cooked rice or quinoa, cooked chicken, diced cucumber, cherry tomatoes, bell pepper, and red onion.
