Description
This grilled udon recipe features chewy noodles, succulent shrimp, and crisp vegetables all tossed in a fragrant soy-sesame sauce, ready in under 30 minutes.
Ingredients
- Udon noodles
- Shrimp (or choice of protein)
- Mixed vegetables (e.g., bell peppers, carrots, broccoli)
- Soy sauce
- Sesame oil
- Garlic (minced)
- Green onions (for garnish)
Instructions
- Cook the udon noodles according to package instructions and drain.
- Let the noodles sit in the colander for a minute to release steam. If they clump, rinse briefly with hot water and gently toss with your hands to separate.
- In a large pan or wok, heat sesame oil over medium-high heat until it shimmers lightly.
- Add minced garlic and stir-fry for about 30 seconds until aromatic.
- Add the shrimp and cook until pink and opaque, about 2 to 3 minutes.
- Add the mixed vegetables and stir-fry until tender, starting with those that take longer to soften.
- Add the cooked udon noodles and soy sauce, tossing everything to combine and ensure all strands are coated.
- Cook for an additional 2-3 minutes until heated through, adding a splash of sesame oil or water if the noodles look dry.
- Serve hot, garnished with green onions.
Notes
Keep this recipe flexible by using whatever vegetables or protein you have. Leftovers can be reheated gently with a splash of water to restore moisture.
