Ingredients

2 large sweet potatoes, peeled and diced

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp chili powder

1/2 red onion, diced

1 avocado, sliced

Fresh cilantro

Salt and pepper to taste

Optional: Greek yogurt, lime juice, feta, cherry tomatoes


Instructions

1. Preheat oven to 400°F.

2. Toss sweet potatoes with olive oil, smoked paprika, and salt. Roast for 25 minutes.

3. Brown ground beef in skillet with cumin, chili powder, and salt.

4. Prepare toppings: dice red onion, slice avocado, chop cilantro.

5. Assemble bowl: layer roasted sweet potatoes, seasoned beef, and toppings.

6. Drizzle with optional yogurt-lime sauce.
