Ingredients
1 lb ground turkey
2 medium sweet potatoes, peeled and cubed
1 red bell pepper, chopped
1 green bell pepper, chopped
1 small onion, diced
2 cloves garlic, minced
2 tbsp olive oil
1 tsp paprika
1/2 tsp cumin
Salt and pepper to taste
Fresh parsley (optional)
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add diced onions and cook until translucent.
3. Stir in garlic and cook for 30 seconds.
4. Add ground turkey, break it up, and cook until browned.
5. Add sweet potatoes, bell peppers, and spices. Mix well.
6. Cover and cook for 12–15 minutes, stirring occasionally, until sweet potatoes are tender.
7. Season with salt and pepper. Garnish with fresh parsley if desired.
8. Serve hot.

You can swap ground turkey for ground chicken or beef.
