Description

A delicious and comforting dish featuring crispy hashbrowns, creamy soup, cheese, and onions. Perfect for potlucks and family gatherings.


Ingredients

  • 1 package frozen hashbrowns (30 oz)
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/4 cup melted butter
  • Salt and pepper to taste
  • 1 cup crushed cornflakes (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the frozen hashbrowns, cream of chicken soup, sour cream, cheddar cheese, diced onion, melted butter, salt, and pepper. Mix well until combined.
  3. Spread the mixture evenly into a greased 9×13 inch baking dish.
  4. If using, sprinkle crushed cornflakes on top for added crunch.
  5. Bake in the preheated oven for 45-50 minutes, or until the casserole is hot and bubbly and the top is golden brown.
  6. Let it cool for a few minutes before serving.

Notes

To make it a little healthier, add some vegetables like bell peppers or spinach. You can also add cooked bacon or sausage for extra flavor.
