- 1/4 cup coconut flour
- 1/4 cup erythritol or sugar substitute
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- Cinnamon sugar for coating
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix the almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt.
- In another bowl, whisk the eggs, melted coconut oil, and vanilla extract.
- Combine the wet and dry ingredients until a dough forms.
- Shape the dough into small balls and place them on the baking sheet.
- Bake for 15-20 minutes until golden brown.
- Remove from the oven and roll in cinnamon sugar while still warm. Enjoy!
