Description

Delicious baked churro bites that are guilt-free and perfect for satisfying your sweet tooth.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or sugar substitute
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • Cinnamon sugar for coating

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt.
  3. In another bowl, whisk the eggs, melted coconut oil, and vanilla extract.
  4. Combine the wet and dry ingredients until a dough forms.
  5. Shape the dough into small balls and place them on the baking sheet.
  6. Bake for 15-20 minutes until golden brown.
  7. Remove from the oven and roll in cinnamon sugar while still warm. Enjoy!
