Ingredients

1 lb lean ground beef

1 tbsp olive oil

1 onion, diced

2 bell peppers (any color), sliced

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp cumin

1/2 tsp salt

1/2 tsp black pepper

2 cups cooked rice (white, brown, or quinoa)

1/4 cup broth or water

Optional toppings: cilantro, lime wedges, shredded cheese, avocado


Instructions

1. Heat olive oil in a skillet over medium heat.

2. Add onion and bell peppers; cook until slightly tender.

3. Push veggies to one side; add ground beef and cook until browned.

4. Stir in garlic, paprika, cumin, salt, and pepper.

5. Mix beef and veggies together.

6. Add cooked rice and broth to the skillet; stir to combine.

7. Simmer for 5 minutes until heated through.

8. Serve warm with optional toppings.

Notes

Store leftovers in the fridge for up to 4 days.

Use quinoa or cauliflower rice for a lower-carb version.
