A quick and tangy Caesar salad dressing that’s light yet full of flavor, perfect for family dinners.
Ingredients

- 3/4 cup mayonnaise
- 3 garlic cloves, minced
- 1 tablespoon lemon juice
- 1 tablespoon anchovy paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/4 teaspoon black pepper
- 1/2 cup Parmigiano Reggiano cheese (optional)
Instructions
- Add all ingredients minus the cheese to a small bowl.
- Stir until you see a smooth, pale emulsion forming.
- Taste and adjust the salt, lemon, or anchovy to your preference.
- Mix in finely grated cheese if you desire a thicker dressing.
- Allow to rest in the refrigerator for approximately one hour.
- Enjoy tossed with romaine lettuce or as a dip or spread.
Notes
Add more lemon juice if you desire a brighter flavor, or adjust the anchovy paste for depth of flavor.
