- 2 medium sweet potatoes
- 1 cup brown rice
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes, then toss them in olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until tender.
- Cook the brown rice according to package instructions.
- While the rice and potatoes are cooking, season the chicken breast with olive oil, salt, and pepper. Grill or pan-cook the chicken over medium heat until cooked through, about 6-7 minutes per side.
- Once everything is cooked, assemble the bowls by adding rice, sweet potatoes, and sliced chicken.
- Garnish with fresh parsley and serve.
Notes
For added flavor, marinate the chicken in olive oil and spices for at least 30 minutes before cooking. You can swap brown rice for quinoa or cauliflower rice for a different texture.
