- 1 red bell pepper, sliced
- 2 medium zucchini, cut into half-moons
- 2 cups cherry tomatoes, halved
- 1 cup cooked chickpeas or white beans (canned, drained)
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon black pepper
- 1 cup cooked quinoa or brown rice
- 2 tablespoons lemon juice
- 1/4 cup chopped fresh parsley or cilantro
- Optional: crumbled feta or a dollop of Greek yogurt for serving
Instructions
- Heat the olive oil in a wide skillet over medium heat. Add the sliced onion and a pinch of salt.
- Cook, stirring occasionally, until the onion softens and edges turn translucent, about 5 minutes.
- Add the minced garlic, red bell pepper, and zucchini to the pan. Stir to combine.
- Cook until the vegetables begin to soften and pick up light color, about 6 to 8 minutes.
- Stir in the cherry tomatoes and cooked chickpeas, then sprinkle the smoked paprika and cumin over everything.
- Cook until the tomatoes release their juices and the mixture becomes saucy, about 4 to 6 minutes.
- Add the cooked quinoa or brown rice and mix well, so grains warm through and absorb the juices.
- Taste and adjust salt and pepper. Add a splash of water if the pan seems dry; you want a loose saucy coating, not a paste.
- Finish with lemon juice and chopped herbs, stirring gently.
- Serve family-style, optionally with feta or yogurt on top.
