Description

A delicious and nutritious pasta dish packed with protein from chicken and healthy carbs from whole wheat pasta, complemented by fresh vegetables.


Ingredients

  • 8 oz whole wheat penne pasta
  • 2 chicken breasts, diced
  • 3 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through.
  3. Add minced garlic and broccoli florets to the skillet; cook for another 2-3 minutes until broccoli is tender.
  4. Stir in the cherry tomatoes and cooked pasta. Mix well.
  5. Remove from heat and add the Parmesan cheese, stirring to combine.
  6. Serve warm, garnished with fresh parsley.

Notes

For a creamier sauce, consider adding a splash of chicken broth or a dollop of Greek yogurt when mixing in the Parmesan cheese.
