- 8 oz whole wheat penne pasta
- 2 chicken breasts, diced
- 3 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the penne pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through.
- Add minced garlic and broccoli florets to the skillet; cook for another 2-3 minutes until broccoli is tender.
- Stir in the cherry tomatoes and cooked pasta. Mix well.
- Remove from heat and add the Parmesan cheese, stirring to combine.
- Serve warm, garnished with fresh parsley.
Notes
For a creamier sauce, consider adding a splash of chicken broth or a dollop of Greek yogurt when mixing in the Parmesan cheese.
