Instructions
- Peel and grate the sweet potatoes. Place them in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine the grated sweet potatoes, chopped onion, minced garlic, salt, and pepper. Mix well.
- Heat olive oil in a skillet over medium heat.
- Add the sweet potato mixture in an even layer and cook for about 5-7 minutes until the bottom is crispy and golden brown.
- Flip the hash browns carefully and cook the other side for another 5-7 minutes.
- Remove from heat, garnish with fresh herbs if desired, and serve immediately.
Notes
For extra flavor, add vegetables like bell peppers or spinach. Ensure to squeeze out as much moisture from the sweet potatoes as possible for crispiness.
