Instructions

  1. Peel and grate the sweet potatoes. Place them in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine the grated sweet potatoes, chopped onion, minced garlic, salt, and pepper. Mix well.
  3. Heat olive oil in a skillet over medium heat.
  4. Add the sweet potato mixture in an even layer and cook for about 5-7 minutes until the bottom is crispy and golden brown.
  5. Flip the hash browns carefully and cook the other side for another 5-7 minutes.
  6. Remove from heat, garnish with fresh herbs if desired, and serve immediately.
