- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped

- 1 can (14.5 oz) diced tomatoes

- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional herbs: fresh basil, thyme, or parsley for garnishing
- 1 cup hummus
- 1 cup baby carrots
- 1 cup cucumber sticks
- 1 cup bell pepper slices
- Whole wheat pita bread
Instructions
- Prep the ingredients: Start by washing and chopping all your veggies. You can even prep the day before to save time.
- Sauté the base: In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until they start to soften, about 5 minutes.
- Add the broth and potatoes: Pour in the vegetable broth and stir in the diced tomatoes and cubed potatoes. Bring to a boil.
- Simmer the soup: Once boiling, reduce the heat to low and let it simmer for 20 minutes. Add the green beans halfway through.
- Season: Taste the soup and add salt and pepper as desired. Fresh herbs can be added now or used for garnish later.
- Serve the soup: Ladle the soup into bowls and garnish with your chosen herbs.
