Ingredients

  • 2 celery stalks, chopped
  • 2 cups potatoes, cubed
  • 1 cup green beans, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional herbs: fresh basil, thyme, or parsley for garnishing
  • 1 cup hummus
  • 1 cup baby carrots
  • 1 cup cucumber sticks
  • 1 cup bell pepper slices
  • Whole wheat pita bread

Instructions

  1. Prep the ingredients: Start by washing and chopping all your veggies. You can even prep the day before to save time.
  2. Sauté the base: In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until they start to soften, about 5 minutes.
  3. Add the broth and potatoes: Pour in the vegetable broth and stir in the diced tomatoes and cubed potatoes. Bring to a boil.
  4. Simmer the soup: Once boiling, reduce the heat to low and let it simmer for 20 minutes. Add the green beans halfway through.
  5. Season: Taste the soup and add salt and pepper as desired. Fresh herbs can be added now or used for garnish later.
  6. Serve the soup: Ladle the soup into bowls and garnish with your chosen herbs.
