- 1 cup whole wheat flour
- 1 cup rolled oats
- 1/2 cup protein powder
- 1/2 cup Greek yogurt
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 cup fresh or frozen blueberries
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, oats, protein powder, baking powder, baking soda, and salt.
- Whisk together the yogurt, milk, honey, melted coconut oil, eggs, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
Notes
For best results, mix dry and wet ingredients separately before combining. Use frozen blueberries without thawing; toss with a teaspoon of flour to prevent sinking.
